I look forward to these tasty tender scapes all year! As the heat and long days kick in, the garlic bulb tries to send up a shoot and flower. But that prohibits bulb development. So we cut that shoot before the flower can develop and open which sends the energy back down to the bulb and we get an extra special delicacy in the kitchen to show for it!
